2023.0302.0001...



I made a vanilla Depression-Era cake last night. (It uses no eggs.) I added about 3/4 cup unsweetened coconut to the batter (not original to the recipe) and glazed the top with some sugar I held back from the batter. I hope it's as good as it looks.

2.25 cup all-purpose flour

1.5 cup white sugar

1.5 tsp baking soda

1/2 tsp salt

3 tsp white vinegar

1/2 cup canola oil

3 tsp vanilla extract

1.5 cup tap water

Preheat oven to 350°F. / Liberally grease a 9x12 inch baking pan with butter. / Mix dry ingredients in one bowl and wet ingredients in another bowl, then mix the two together and pour into pan. / Sprinkle the top with held back sugar (about 1/4 cup). / Bake on lower rack for 35 minutes.

  4. As I have diabetes I could change the 1,5 CUP of sugar with some Stevia sugar and it'll do well.

  5. If you also want an egg free (flapkack type) biscuit search for 'ANZAC Biscuits', these too are a favorite of mine. They were made in the trenches at Gallipoli by Australian and New Zealand solidiers as a treat and using basic ingredients. They are lovely and remind me of my early life in Sydney as a child although I am not in the UK.

  8. You can add 1/2 cup of cocoa to make this a chocolate cake, too. My mom did it all the time.
