  2. As a French man I always found carrot cakes to be a bit weird. I understand their use as they are slightly sweet, but I guess we here see carrots only as vegetables.
    I'll have to try and bake one of these cakes one day, though.
    May I ask you point me to one of your fav' recipe, please?

    But as I have diabetes since October 2016 I have to be careful on the among of sugar I can eat.

  5. BatRedneck - I've never made one myself. Google will have zillions of variations. Another vegetable that gets used here is zucchini, in bread, and chocolate cake.

I love carrot cake...I have a recipe from a lady that used to test cook/bake for magazines...Her recipe is to die for...The cake weighs about 50 pounds when you place it in the oven to bake...I love a carrot cake that is not too sweet and the icing is made with cream cheese and not tooth aching sweet eighter...Now, where is the damn coffee...

  10. My favorite also, followed by German Chocolate (which should be called German's Chocolate cake, named for Sam German who invented the chocolate used in the original cakes). There are many variations of Carrot Cake and they all taste and look about the same. For you bakers out there, try to find a recipe that includes pineapple for a wonderful tropical flavor. My favorite actually uses whole cranberry sauce that is swirled on top of the batter and makes a marbleized cake. It also cuts down on the cloying level several notches, making it somewhat tart to counter the sweetness of the cream cheese frosting. By the way, most cakes and breads using carrots and zucchini are not meant to flavor the food with those ingredients, but to add moisture to the finished product. And yes, as VR Cooper says, "Now where's the damn coffee?" and a big glass of milk with the chocolate cake. Bon Appetit!   11. Milleson - I never knew that about German's Chocolate cake. It's another fave of mine. Yes, pineapple has to be in the carrot cake. Adding cranberry sauce sounds very interesting.

    What's peculiar about me is that I like to read recipes but rarely make anything. I have a few simple -and I mean simple- things that I make.

  12. That is interesting that you read recipes but rarely make anything. I guess we're not all cut out for the kitchen. My wonderful Mom got me started early on in life, showing me how to cook and many techniques for good food preparation at the age of 8. Both my parents worked so I had dinner on he table when they got home. Had plenty of time after school to accomplish this. Never considered it a chore, just fell in love with the whole process and have enjoyed many good meals all my life. When you know how to cook, you never have to wonder what's for dinner.

  13. Milleson - Whenever I do any kind of cooking, especially baking, I get flustered that I'll make a mess. That's the compulsive disorder in me, to be neat at all times. I realize that one has to crack a few eggs to make an omelette, so I usually spill something. Jerry does all the meal planning and preparation. I do the clean up. Not a horrible arrangement since he likes to cook. Lucky for me!

    @Rick, I'm smiling because it seems I have been a Jerry most of my life, whatever the quality of the companionships. And it most often turned out to be ok, like "Fine, I'll vacuum the place, if you're ok to clean the windows / I will cook the whole (your)family dinner but you'll take charge of the cleaning afterwards".
    Some say "compromises", I would just say "balance".
    (and sh*t I realize I forgot to buy carrots at the grocery, so much for the cake...)
