Blueberry Buckle Snack Cake
After months and months of not baking anything, I finally got off my duff and put this together. The recipe and the blueberries came from our neighbors. The brute force to stir the unusually stiff batter came from me. I swear, I could have rolled it into balls and made cookies, it was so stiff.
I bet it was worth the effort because it looks yummy :-)
ReplyDeleteThe berries(straw, rasp and blue) in the markets now are big and very sweet, but I'm sure homegrown berries are better. A slice of that and a good cup of coffee...YUM!
ReplyDeleteHere in Province de Québec in the Lac St-Jean region, blueberries are very abondant and wild ones are the most delicious. This year they are specially numerous and they said that they are even growing like grape of raisins. Like maple sirup, it's part of our heritage.
